I can't remember the last time I used old fashioned butter cream. It's way too sweet for my taste and seems often to get left in a sticky mess when offered to toddlers. The simple addition of cream cheese lightens the whole thing up and makes a much tastier, easier to handle topping for cakes and cupcakes.
This recipe is so easy it can all be pre weighed into the mixing bowl and combined in one easy step.
Beat together 250g cream cheese (prob best to soften this by stirring with a spoon first), 250g unsalted butter and 625g icing sugar. Beat it until its smooth. It can take a while to get rid of all the butter lumps. Be patient. Once you have the consistency you're looking for you can add colours or flavours.
