Jam Drop Biscuits

These moreish little biscuits are nostalgic of my school days. They make the perfect gift wrapped in a twist of celophane or in an old school brown paper bag. They tick every box for a small-friendly bake. Make and quick and easy, tactile dough that you get to prod and squidge and fill with sweet, sticky jam. Happy baking.
Ingredients
80g butter or stork
80g golden caster sugar
1 tsp vanilla extract
125g self raising flour
40g corn flour
2 tbsp milk
Jam of your choice
Method
Cream together your butter, vanilla extract and sugar.
Add flour, corn flour and milk. Mix with a wooden spoon until clumpy then use your hands and squish the ingredients together into a dough.
Tear off clumps of dough and roll into small balls and place them on a baking tray.
Press your thumb or finger (or the handle of your wooden spoon) into each circle making a little hollow. Fill with jam.
Bake in the oven at 180° for 15 mins. Remove and place on a wire rack or chopping board to cool.
If you are baking with a very small, you can simple put all of the ingredients in a large mixing bowl and squish it together.
TIP: Try using a baby weaning spoon to allow little bakers to spoon in the jam. The smaller head and slight curve might just help them be more accurate.
