Squishy Pancakes

Pancakes American style, but made in five minutes.

There are days when everyone gets out of the wrong side of bed and by 10 o’clock you wish you could start the whole day again. On those days, my easy Squishy Pancakes usually go a long way to saving the day from disaster. An all in one method and a secret ingredient make these the fastest, fluffiest pancakes you can make and give stroppy little ones instant satisfaction. Fun to make and straight to plate.

I have been known to make these on a school day, but they’re also great mid-morning or late afternoon - the perfect pick me up. Also perfect made just for me after nursery drop off on one of those mornings.


175g self-raising flour

1 tsp baking powder

2 tbsp caster sugar

1 egg

250g natural yoghurt

3 tbsp milk

A little sunflower oil or spray for frying


A large jug or mixing bowl


Large frying pan

Add flour, baking powder and caster sugar to a large jug or mixing bowl.

Add the egg, yoghurt and milk and whisk until smooth - this is excellent stress relief in itself.

Plop a ladle full of the thick mixture into a hot, oiled frying pan and cook for 1.5-2 minutes each side. You’ll know it’s time to flip them when little bubbles appear on the surface. Little ones love waiting to spot these. You should be able to flip it easily with a normal spatula / fish slice.

That’s it, they’re really that simple. Serve them with your favourite toppings fresh from the pan or pop them all in a very low oven to keep them warm until everyone’s ready.
